Wild Rice Pilaf

I know that some people are trying to stay away from carbs, but that’s not me. My body needs good complex carbs like brown rice and sweet potato. That’s why I developed this wild rice pilaf. It is super simple and tastes great.

2 cups Wild Blend Rice
1/2 medium Sweet onion, chopped
6 or 8 Mushrooms, sliced
2 or 3 tsp Mediterranean Oil Blend (or the seasoning of your choice)
3 1/2 cups Chicken broth or water
2 Tbs Butter

Optional additions:

  • Carrots
  • Green peas
  • Tomatoes
  • Garlic
  • Chicken

Heat the broth or water and butter to boiling. Add the rice and other ingredients. Stir a couple of times to blend.

Reduce heat to medium. Cover and simmer until all liquid is gone, about 45 minutes. If rice is still crunchy, add 2-3 Tablespoons of water and cook a little more.

Fluff with fork and serve.
